Back in October when I went to the Prevention Magazine R3Summit I was chosen as a participant in their Tuna Cookoff Challnge. It was done Chopped style where they gave us a "basket" of ingredients and we had 10 minutes.
It was so nerve wracking! There was a prize basket worth more than $1,000 on the line, PLUS... I wanted to win just for bragging rights!
Well....... I didn't win. Womp, womp. BUT, I do think I had a pretty good thing going with my Avocado Tuna Salad. So, if you need a quick lunch idea but you only have a few items on hand, here's your recipe!

Avocado Tuna Salad

1 avocado
1/4 cup plain greek yogurt
1 can tuna, drained
Juice of 1/2 a lemon
salt to taste
your favorite veggies- I used bell peppers, corn, red onion, and celery.
Mash the avocado, yogurt, lemon and salt together until smooth. Add the tuna and veggies and fold gently to combine. Allow to sit in the fridge to get really tasty and serve over lettuce.
Easy, healthy, quick, and incredibly cheap to throw together!
