I received this recipe from Lauren who blogs over at Breathe Deeply and Smile. It's her mom's recipe and I gotta say... Lauren, tell your mom "yummo!"
I love the simplicity of this recipe AND it's a make-ahead recipe. I'm going to my future in-laws for Thanksgiving so we're definitely needing something that we can make here, pack up, and then finish off once we get there. This one is perfect!

Do-Ahead Mashed Potatoes
5 lbs baking potatoes
1 stick of butter
1/2-3/4 of a 16 oz container of sour cream
1 block of cream cheese, softened
1/2- 1 cup of milk
3 Tbsp grated onion
salt & pepper
Grease 11x13" pan. Peel potatoes and boil, then cover and cook until fork tender.
Mash as usual-I use my kitchen aid to mix, next adding butter, milk. When combined add the remaining ingredients. When the mixture is creamy and fully combined, pour into pan. Refrigerate overnight. The next day, bake 350-375 degrees uncovered in the oven for 35 min.
**I added cheese on the top of my potatoes before I popped it in the oven to heat.
