Today I will be sharing my Ham & Cheese Frittata with all of you. I haven't seasoned my cast iron skillet yet so in the photo below you'll see I used an oven safe pot which was just the right height and worked perfectly. This frittata is also a perfect “breakfast for dinner” meal. Feel free to add or replace any of the vegetables, meat, or cheese and you can easily have your own custom frittata in no time.

Today I will be sharing my Ham & Cheese Frittata with all of you. - 1 TBS oil
- 1/2 C onion - chopped
- 1/2 C green pepper - chopped
- 2 cloves garlic - minced
- 4 potatoes - cubed and cooked (I like my potatoes on the softer side so I boiled them for about 10 minutes)
- 3/4 C cooked ham - cubed
- 8 eggs - beaten
- Salt & Pepper to taste
- 3/4 C shredded cheddar cheese
- Heat oil in a large oven safe skillet over medium heat
- Add onion and green pepper; cook until tender
- Add garlic, cook one more minute
- Stir in potatoes and ham, cook until heated through
- Reduce heat to medium-low; add eggs, salt and pepper
- Cook 5 minutes or until eggs are firm on the bottom
- Top eggs with cheese; bake at 350 degrees for 10 minutes
- Cut into wedges and serve
