We had a rainy weekend here in Longhorn Land 2 weekends ago. It was one of those lay around the house listening to the rain, watching football, and napping weekends.
It was perfect Chili weather. Chili and cornbread to be exact.
Crockpot meals are perfect for weekends like this. Plus, crockpot chili makes your house smell yummy!
Crockpot Chili
6 qt crock pot
2lbs lean ground beef
2 medium white onions sliced or chopped
1- 29oz can tomato sauce
2 large cans diced tomatoes
1 can crushed tomatoes
2- 15oz can kidney beans
Spices to taste: chili powder, garlic powder, cumin, oregano, paprika, cayenne pepper, salt
Brown the meat with the chopped onions. Drain any fat. Place beef/onion mixture into crockpot and add all other ingredients. Add water for a thinner chili. Let everything simmer and get all friendly and hot for a few hours on low heat. Serve with cornbread, shredded cheese, sour cream and stretchy pants.
Leftovers: keep in the fridge or freezer in airtight containers!
