I've been in my new place for almost 2 months now and last night I started to hang pictures. I had one frame hanging before with a collage of pictures of my sisters and me through the years, but that.was. it.
Part of my aversion to hanging anything was because I wasn't quite sure where I wanted everything to go.... the other part is because I didn't want to do it by myself, seeing how it involves measuring, hammering, and since I am a bit vertically challenged, reaching. I also have this thing with crooked pictures/hanging things on walls. Don't like it. Bothers me to no end and I will spend 20 minutes trying to get it to hang correctly....even if it's in someone else's house.
So you can see my anxiety. It's just me now, and while I do have friends (I swear), I felt like calling one of them to come over to help me pound nails into my wall was a bit silly.
Speaking of it being just me (and Maddy the princess wiener dog), tonight's dinner was a quick and simple one person meal that I dreamed up during Pilates class. It would probably also be great in a wrap, but it was very tasty on it's own.
Avocado Chicken Melt
1.5 tsp coconut oil
1 chicken breast
sliced onion- your preferred amount
half of a small avocado- sliced
bacon bits
1 slice of jalapeno jack cheese
Heat coconut oil in a small saute pan over medium heat until melted. Cook chicken about 3-4 mins per side. Add in onion slices and cook until translucent and fragrant.
Assemble: pile onions on an over safe dish, top with chicken, avocado slices, bacon bits and top with cheese. Place under broiler until the cheese is melted.
Enjoy!
